Nonalcoholic fatty liver disease (NAFLD) also known as liver steatosis, refers to a condition where fat accumulation occurs within the liver. Between 30-40 percent of the adults living in the United States are living with NAFLD.

Carlstrom and his colleagues examined the effect of supplementing a fat-rich and high-sugar Western diet by dietary nitrate in mice.

They separated the mice into three groups and gave each of them an individual diet. The control group ate the normal diet, while the high-fat diet group consumed the equivalent of a Western diet, and the third was fed a diet high in fat that included nitrate supplements.

As is expected, mice who ate a high-fat diet added weight, as well as fat mass and they, also showed elevated levels of blood sugar. However, all these indicators were significantly less in the mice who also took Nitrate.

Carlstrom discusses the results and states “When we supplemented with dietary nitrate to mice fed with a high-fat and sugar Western diet, we noticed a significantly lower proportion of fat in the liver.”

Research conducted in the past, as the researchers clarify, has demonstrated that eating nitrate supplements the metabolism of cells. The research also suggests that vegetables with green leaves could help prevent metabolic diseases like type 2 diabetes.

Researchers also know that higher consumption of vegetables and fruits can improve the cardiovascular system.

“We think that these diseases are connected by similar mechanisms,” Carlstrom believes, “where oxidative stress causes compromised nitric oxide signaling, which has a detrimental impact on cardiometabolic functions.”

The research team explains that the medical profession isn’t sure of the exact ingredients that make leafy greens healthy. “No one has yet focused on nitrate, which we think is the key,” adds Carlstrom.
